Have I told you I love granola? Actually, it is due to my lack of sympathy towards milk and flavoured yogurts. I’m really not a picky person – I swear – it’s just this, and coffee, and tea (ok, fine, I give up!). Anyway, I do love plain and simple yogurt – give me a greek one any time, add some fruit and granola and I’m really rocking that healthy diet all the way.

The idea appeared to me the other day when I got a granola packaging briefing (if you recall I’m a creative designer, so I do stuff like this from time to time apart of the usual drawings you think we, designers, really do), and that got me thinking, how hard can it be to prepare it? I’m kind of having a 1/3 life crisis and owning up to what I’m eating nowadays has become fundamental for me. Knowing where does it all come from, how it’s made, how is it processed, does it contain any sort of chemicals and so forth  – all this at a non-conspiracy-theory-kind-of-level.

So, without further ado, I decided to give it a try. Don’t worry, the recipe has already been tested (twice) and received great reviews, so you are safe. It’s really quite simple and the smell is absolutely delicious, you should definitely give it a try.

Já vos tinha contado que sou uma granolina? Na realidade esta fixação pela granola é devida à falta de opções de pequeno-almoço e lanches, sendo que detesto leite e chá… e café (juro que não sou daquelas esquisitinhas niquentas que ninguém pode levar a jantar a casa de familiares, com risco de receber aqueles olhares reprovadores, não senhora,  é mesmo só estas três coisas mínimas e insignificantes). Portanto eu gosto bastante de iogurtes simples, se forem gregos ainda melhor, juntando umas frutas, mel e a bela da granola e temos uma combinação vencedora, capaz de me manter no curso de dieta saudável a qualquer altura do dia.

A ideia iluminou-se-me no outro dia quando me foi entregue um briefing para o design de embalagem para uma granola (sim, eu sou designer, se bem se lembram, o que quer dizer que à parte dos eternos bonecos que a maioria acha que é o meu trabalho, também faço estas coisas mais “adultas” e tal), seja como for, foi coisa para me por a pensar, quão difícil será fazer tal coisa? Para os que desconhecem, eu estou a ter uma crise de terço de idade, o que quer dizer que ando super atenta ao que como e como como (wow muitos comos juntos), embora ainda não na vertente de teoria da conspiração, calma!

Portanto, sem grandes delongas, decidi experimentar e trago-vos aqui a dita receita aprimorada por moi myself, e sendo que já foi testada (por duas vezes) e muito elogiada, é seguro fazerem também. Acreditem que vale a pena e tem o plus de poderem tirar e pôr as sementes e frutos que quiserem ao vosso gosto.

-A

– Ingredients (yield: about 2kg) – 

DRY MIX

  • 600 gr full oatmeal
  • 150 gr toasted whole wheat flakes
  • 150 gr full barley flakes
  • 150 gr sunflower and other seeds
  • 200 gr dried fruits (coconut, dried blueberries, dried mango, raisins, dried cranberries, …)
  • 200 gr nuts (pecan nuts, cashews, peanuts, …)

SAUCE

  • 250 gr flowered honey
  • 50 ml peanut oil 
  • 100 gr brown sugar (or coconut sugar)
  • 2 tablespoons of vanilla scent
  • 2 teaspoon of cinnamon
  • pinch of salt

 – Preparation – 

Preheat the oven to 180 degrees.

In a large bowl mix the dry ingredients altogether, except for the fruits.

In a small pan start making the sauce. Put the heat at medium temperature and add the honey, the sugar and the peanut oil, always stirring the dressing so you don’t overdo the caramel. Join the cinnamon, the vanilla extract and season it with salt to give that extra twist. The more sugar you add, the crunchier the granola will get. Pour the sauce into the bowl with the dry stuff and with a wooden spoon mix till you get an even dough.

In an oven tray, spread a cookie sheet and pour the mix into it; you’ll probably need two trays for the whole 2kg of granola, so be prepared. And if you are worrying about the fruit, don’t be, I haven’t forgotten, you’ll add them in the end, so it doesn’t lose that freshness and stickiness.

Let it bake for about 45 minutes, or until the mix is golden and crunchy, stirring it every 15 minutes so it doesn’t stick and burn. Let it cool in a pastry tray and add the dry fruit. Keep it in a airtight container or in a jar with a very tight lid. It should preserve it for about a month or more.

As an eating suggestion, serve it with plain greek yogurt, some red fruits and sprinkle it with honey.

– Ingredientes (peso: cerca de 2kg) – 

MISTURA SECA

  • 600 gr flocos de aveia integral
  • 150 gr flocos de trigo integral tostados
  • 150 gr flocos de cevada
  • 150 gr sementes de girassol e outras sementes
  • 200 gr frutos secos (côco, mirtilos, manga, passas, groselhas, …)
  • 200 gr de uma mistura de nozes pecan, cajus, amendoins, …

MOLHO

  • 250 gr mel de flores
  • 50 ml óleo de amendoim 
  • 100 gr açúcar mascavado (ou açucar de côco)
  • 2 colheres de sopa de aroma de baunilha
  • 2 colheres de chá de canela
  • sal

 – Preparação – 

Preaqueça o forno a 180graus.

Numa tigela grande, misture os ingredientes secos com excepção dos frutos secos.

Numa panela pequena, comece a fazer o molho. Em lume médio junte o mel, o açucar e o óleo de amendoim, mexendo sempre para que o caramelo não queime. Junte a canela, o aroma de baunilha e o sal para aquele travo salgado. Quanto mais açucar juntar, mais crocante ficará a granola. Deite o molho sobre a mistura seca e com uma colher de madeira envolva tudo até obter uma mistura homogénea.

Num tabuleiro de levar ao forno, ponha uma folha de papel vegetal; provavelmente irá precisar de dois tabuleiros se quiser fazer os 2kg de granola, por isso esteja preparado, e se está a pensar o que terei feito com os frutos secos, não se preocupe, não foram esquecidos, irá juntá-los no final, para que não percam aquela frescura e textura.

Deixe cozinhar durante 45 minutos ou até a mistura ficar dourada e crocante, mexendo a cada 15 minutos para que não fique queimado nem colado. Deixe arrefecer numa rede de pasteleiro e adicione os frutos secos. Reserve em frascos isolantes ou com tampa bem apertada. Deverá preservar a granola por cerca de 1 mês.

Como sugestão, sirva com iogurte grego natural, frutos vermelhos e regue levemente com mel.
